Crisp Lemon Sugar Cookies

Wow, 3 entries in 1 month! I guess the drought is over. Anyway, while I'm watching comic-con on G4, I decided to blog these cookies I made a couple of nights ago. I wanted something quick and easy, and the fact that these have lemon extract didn't hurt either. It's like the perfect summer flavor (aside from watermelon). These are from the Taste of Home cookie book I got from Christmas, and they are delicious. They have a nice bite, but the insides are nice and soft. The lemon flavor isn't too strong, and the sugar on top gives it a nice sweet kick. So yeah, hope everyone is having a great summer!


INGREDIENTS
1/2 cup butter, softened
1/2 cup butter-flavored shortening
1 cup sugar
1 egg
1 tbsp. milk
2 tsp. lemon extract
1 tsp. vanilla extract
 2 1/2 cups all-purpose flour
3/4 tsp. salt
1/2 tsp. baking soda
additional sugar

In a large bowl, cream butter, shortening and sugar until light and fluffy. Beat in egg, milk, and extracts. Combine the flour, salt and baking soda, gradually add to creamed mixture.

Roll into 1-inch balls or drop by rounded teaspoonfuls onto ungreased baking sheet. Flatten with a glass dipped in sugar. Bake at 400 F. for 9-11 minutes or until edges are lightly browned. Immediately remove to wire racks to cool.

Nerdy Cookie Cutters


So I was reading one of my favorite bloggers (Heidi-Ann) and in her Friday post she now lists cool & unique items. Last week my favorite item was a Divine Christmas ornament (I better get them damn cha-cha heels for Christmas!) and this week my fave would have to be the Pac-Man cookie cutters! Almond Sandies

I made these almost a week ago, and I should apologize for not posting sooner. But in my defense, I've been busy job-hunting and trying not to melt in the AZ sun. It is officially time for the monsoon, so while the temperatures have been slightly cooler, the humidity is pretty bad. Oh well, only 4 months until I can start worrying about my fall baking. Anyway, I needed something to bake and found a recipe from this cookbook which was a gift from one of my friends for Christmas.
This book is AMAAAAAAAAZING. The diversity of the recipes is what makes me happy, but it can also be a pain if you have NO idea what to bake. So after blindly opening to a page, I opted to make some Almond Sandies.


INGREDIENTS:
1 cup butter, softened
1 cup sugar
1 tsp. almond extract
1 3/4 cups all-purpose flour
1/2 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/2 cup slivered almonds

In a large bowl, cream butter and sugar until light and fluffy. Add extract, mix well. Combine flour, baking soda, baking powder, and salt; gradually add to creamed mixture. Fold in almonds.

Drop dough by rounded teaspoonfuls onto ungreased baking sheets. Bake at 300 F. for 22-24 minutes or until lightly browned. Cool for 1-2 minutes before removing to wire racks.

I really liked these and will hopefully make more of them soon. The crunch isn't super hard, and the almond flavor can't be beat. It really is a great summer cookie, the only downside was the long cook time. Still, if you have a good movie to watch it passes by quick enough. So yeah, I'm going to be baking again in a couple of days (first I have to continue studying for a skills test for a possible job), which means I may get to a whole whopping 2 entries this month. Huzzah!
